The easiest way to get an idea if a player is good is their "overall" statistic.
However, stats are only revealed if the player has a high class or if you have scouted them.

Having better players doesn't always mean your team will win (just like in real life)
What tactics to use really depends on the type of players you have. E.g if you choose a passing game tactic, then you need high passing attributes throughout the team. For long ball, your defenders and midfielders need good long pass stats. Counter-attacking requires players with good pace, acceleration, flair etc.
Formation doesn't really impact tactics so much, so you'd just use one which allows you to play the best players in their correct positions.
